Heavy doors, hinges and springs
A door is a heat seal that happens to swing. When it stops closing square, the oven starts behaving like a sensor fault — and replacing the sensor changes nothing.
The door is the part of an oven nobody thinks of as a component. It is treated as furniture: the thing you open to get at the appliance. In fact it is a heat seal under mechanical load, it is the heaviest moving assembly in the kitchen, and when it goes out of adjustment it produces symptoms that read as electronic faults.
What a door is actually doing
A professional oven door is a multi-layer sandwich of glass and steel with insulation between the layers. It is heavy on purpose — the mass and the layering are what keep the outer surface at a safe temperature while the cavity is at baking heat.
That mass is carried by two hinges, and the hinges are counterbalanced by springs so the door does not slam down when released. Every time the door opens and closes, those springs cycle and those hinge pivots take the load. Over a decade-plus of daily use in a kitchen where the range gets used the way people who buy professional ranges use them, the hardware wears. Nothing is defective about that; it is a wear item behaving as a wear item.
The three things you will notice first
The door drops. It no longer holds at a partial opening, and swings down under its own weight instead of settling. That is spring tension lost, or a hinge that has worn its pivot oval.
The gap is uneven. Close the door and look along the top edge, then along the hinge side. A door that seals along one run and shows daylight along another has gone out of square, usually because one hinge has worn further than the other.
It will not latch. On an oven with a self-clean lock, a door that has dropped even slightly no longer presents the catch where the latch expects it, and the appliance may refuse to start a clean cycle at all — correctly, since it will not lock a door it cannot secure.
The symptom nobody connects to the door
Here is why this entry sits in the ledger rather than in a maintenance note.
A door that does not seal lets the cavity bleed heat continuously. The control sees the cavity falling below setpoint and fires again, sooner and for longer than it otherwise would. The owner experiences an oven that will not hold temperature, that browns unevenly, that runs hot near one edge, that never settles.
Those are precisely the symptoms of a drifted temperature sensor. So the sensor gets replaced, at a real cost, and the oven behaves exactly as it did before — because the sensor was reading the cavity correctly the whole time. The cavity really was losing heat.
This is why the door and the gasket come first in every oven survey we run, ahead of anything requiring a meter. They take ten seconds to check and they invalidate everything downstream of them.
The gasket, separately
The gasket is not the hinge. A gasket that has hardened, flattened along its bottom run or pulled out of a corner clip produces the same heat-loss symptoms with the door hardware in perfect condition. Run a hand along it: it should be resilient, not stiff, and it should sit evenly in its channel the whole way round. A gasket is an inexpensive part and one of the highest-value replacements on a cooking appliance.
Adjustment, and the point past it
Hinges have some adjustment in them, and a door slightly out of square can often be brought back without parts. There is a limit. Once a pivot has worn oval or a spring has lost its tension, adjustment is borrowing against the other side of the door, and the fix does not hold.
Two things are worth saying about the replacement. Hinges are under spring load, which is what makes them the one part of an oven we would ask you not to attempt; a hinge that releases unexpectedly is genuinely dangerous. And hinges should be replaced in pairs. The second one has done the same number of cycles as the first.
Dishwashers, for the same reason
The same logic applies one cabinet along. A dishwasher door that falls open instead of staying where you put it has lost a spring or a door cable, and every subsequent drop lands the door’s weight on the bottom hinges. Left alone it takes the hinges, and after the hinges, the seal.
